I think you'll have to track that outside of Qualtrics. If the link is on your own website, there are probably web stats available. If not, you could make the link a script on your web server that counts then redirects to the actual link.
I doubt it would work, but you could try adding JS to your end of survey message that updates an embedded variable that you defined in your survey flow.
